Truffle mayonnaise

  • 200 g fresh high-quality very finely chopped
  • 1 teaspoon finely chopped capers
  • 1 tablespoon finely chopped shallot
  • 1 teaspoon Oliehoorn mustard
  • ½ tablespoon Worcestershire sauce
  • 1 fresh egg yolk
  • Salt and pepper to taste
  • 300 grams of fries
  • 2 tablespoons Oliehoorn truffle mayonnaise
  • Finely chopped parsley or chives as a garnish

    Mix the steak with shallot, capers, mustard, and Worcestershire sauce in a bowl. Season with salt and pepper.

    Shape the mixture using a serving ring or by hand into two round portions.

    Make a well in the center for the egg yolk, if desired.

    Garnish it with the Oliehoorn truffle mayonnaise and sprinkle the tartare with fresh herbs.

    Finally, serve a portion of fries with the dish.
