Poké bowl with chicken and Crispy Chili Mayo

- 2 whole chicken breasts
- 50 g flour
- 1 egg
- 75 g panko
- Oil for frying
- 150 g sushi rice
- 1 avocado
- ½ cucumber, cut into thin strips
- 1 carrot, cut into thin strips
- ½ mango, diced
- 2 tablespoons of soy sauce
- 1 tablespoon rice vinegar
- Salt and pepper to taste
- Oliehoorn crispy chili mayo
- Fried onions sesame seeds

Cook the rice according to the package.

Mix the rice with the rice vinegar and let it cool slightly.

Coat the whole chicken as follows, first with flour, then with egg, and then in the panko, pressing down well for extra crunch.

Fry the chicken for 6–8 min per side until golden brown and cooked through over medium heat.

Let it rest for 2 minutes and then slice it diagonally.

Top the bowl with the rice, toppings, and sliced chicken. Drizzle generously with the crispy chili mayo and sprinkle with fried onions and sesame seeds.
