Mini naan pizzas with curry vegetables

- 4 mini naan breads (or 2 large naan, halved)
- 1 red bell pepper
- 1 small zucchini
- 1 red onion
- 1 tablespoon of olive oil
- Curry Sauce Extra Spicy
- Pinch of salt and pepper
- 50 grams of grated cheese
- Handful of fresh coriander or parsley
- Pinch of chili flakes or harissa

Preheat the oven to 200°C.</span>

Cut the bell pepper, zucchini, and red onion into thin strips.

Mix the vegetables with olive oil, salt, and pepper.</span>

Fry them in a hot pan or grill pan for 5-7 minutes until they are soft and lightly charred.

Place the naan breads on a baking sheet.</span>

Spread a thin layer of curry sauce on them.</span>

Spread the grilled vegetables over it. </span>

Sprinkle with cheese.</span>

Bake the mini naan pizzas for 8-10 minutes in the oven until the edges are crispy and the cheese is melted.

Garnish with fresh herbs and optionally a pinch of chili flakes.

Cut the naan into small triangles and serve warm on a snack board. Extra delicious with an extra curry sauce on the side as a dip.
