Crispy chicken burger with Sweet Pepper Mayo
Ingredients (16)
- 2 chicken breasts (approximately 150–180 g each)
- 50 g flour
- 1 egg, beaten
- 50 g breadcrumbs (preferably panko)
- ½ tsp paprika powder
- ½ tsp garlic powder
- Salt & pepper
- Oil for frying or deep-frying
- 2 hamburger buns (brioche or sesame
- Melted cheese (cheddar or mozzarella, optional)
- Optional jalape0o, crispy onions or avocado
- 100 g white or red cabbage, thinly sliced
- 1 carrot, grated
- 2 scallions, sliced into rings
- 1 tbsp olive oil
- Juice of ½ lime
Instructions(10)
- 1Coleslaw: mix shredded cabbage, carrot, and spring onions in a bowl, add olive oil and lime juice, toss well and refrigerate until use.
- 2Flatten the chicken breasts to an even thickness.
- 3Mix flour with paprika powder, garlic powder, salt, and pepper.
- 4Coat the chicken in flour, egg, and breadcrumbs.
- 5Heat oil in a pan or deep fryer and fry the chicken for 4-5 minutes on each side until golden brown and cooked through. Let drain on paper towels.
- 6Cut the rolls in half and toast them briefly.
- 7Place a generous portion of coleslaw on the bottom half of the bun.
- 8Place the crispy chicken breast on top.
- 9Optionally add melted cheese, jalape0, avocado.
- 10Top it off with a generous drizzle of Sweet Pepper Mayo and the top half of the bun.
